💁‍♀️海底椰響螺煲雞腳

材料

雞腳，玉竹頭，姜，海底椰，響螺，鹽，水，蜜棗

做法

1.雞腳飛水，玉竹頭切片，姜拍爛。

2.海底椰洗乾淨，響螺泡水煮一下。

3.全部材料放進湯煲，加水，大火燒開，小火煲2個小時，加鹽調味即可。

小訣竅

玉竹頭無璜，比玉竹片安全。

 

💁🏻海底椰老雞湯

材料

老母雞半只，海底椰適量，花旗參適量，百合適量，鹽適量

做法

1.將雞斬件焯水。

2.與海底椰、花旗參、百合一起入鍋，猛火燒開後文火慢燉2小時用鹽調味就好。

 

💁‍♂️海底椰無花果雪梨湯

1.豬脊骨洗淨，放入滾水中煮片刻，拿出來清水沖洗乾淨

2.海底椰、無花果、南北杏，全部用清水洗淨，備用

3.雪梨洗淨，去芯留皮，切大塊

4.湯鍋放入清水2500毫升，待水滾後放入豬脊骨大火煮開後，轉為中火煮半小時，再將剩餘的材料放入，以大火煮開，轉為小火湯一定要保持在微滾的狀態，再煮1個半小時，放鹽調味即可

烹飪技巧

1、豬脊肉在煲湯前要先出水，去除血水和油膩，煲出來的湯才會清。

2、清水要一次性放，不要中途加水，所以，火候的控制很重要。
