促進食慾　消炎退熱

苦瓜味苦性寒，具有清熱瀉火的效果，苦瓜中的苦瓜甙和苦味素，本身就有改善食慾不振的效果，還有開胃健胃、助消化等優點，其中含有的奎寧，則有幫助平衡體溫中樞的作用，讓人不容易中暑、燥熱。因此炎炎夏日熱到讓人吃不下時，涼拌苦瓜就是許多媽媽會準備的消暑良方。

降血糖血脂　護肝武器

苦瓜在中醫上屬於入心、肝、脾、肺經，其中的苦瓜素以及類似胰島素的物質，能幫助促進體內糖分解，尤其是對糖尿病患者能產生降血糖作用，因此有學者稱之為「植物胰島素」。此外，苦瓜的維生素C也十分豐富，每100克有56~84毫克，約是番茄的3倍。維生素C就如同天然的抗氧化劑，能幫助減少細胞突變或破損的機會，並幫忙修復受損細胞，降低癌症或肝病變的發生機率。

脾胃虛弱者及孕婦　須適量食用

苦味食品不宜過量食用，否則會易引起噁心、嘔吐等症狀，苦瓜性寒，吃過量容易傷脾胃，所以脾胃虛弱的人更要注意食用量。另外，由於苦瓜內含有奎寧，奎寧會刺激子宮收縮，造成流產；所以也有孕婦不宜吃苦瓜一說，雖然奎寧在苦瓜中含量極少，適量吃並無大礙，但為了慎重起見，有些婦產科醫師仍會建議孕婦少吃苦瓜。
